Earl Grey & Condensed Milk Jelly

Earl Grey & Condensed Milk Jelly

(using 12g powdered gelatine to set ~2⅓ cups liquid)

🧾 Ingredients

  • 2 tbsp Earl Grey loose tea (or 3 bags)

  • 1¾ cups water (420ml)

  • ½ cup sweetened condensed milk (120ml)

  • 12g gelatine powder

  • 8 tbsp hot water (to dissolve gelatine — per your packaging)

  • Optional: ¼ tsp vanilla extract or lemon zest for extra depth


🧂 Sweetness note:

  • This will be lightly sweet. If you like it sweeter, you can add 1–2 tsp sugar to the tea while steeping.


🔧 Step-by-step Instructions

1. Brew the Earl Grey tea

  • Bring 1¾ cups (420ml) water just to a boil.

  • Add 2 tbsp loose Earl Grey or 3 tea bags.

  • Steep for 4–5 minutes until quite strong.

  • Strain out the leaves or remove the bags.

  • While still hot, stir in condensed milk and any sugar/vanilla/zest if using. Mix well.

2. Dissolve the gelatine

  • In a separate bowl, add 8 tbsp very hot water (not boiling, but just below).

  • Pour in your 12g powdered gelatine.

  • Stir constantly for 1–2 minutes until fully dissolved and no granules remain.

Tip: If there are still bits, gently warm the mixture in the microwave for 5–10 seconds and stir again.

3. Combine

  • Pour the gelatine mixture into the Earl Grey milk tea, and stir thoroughly until fully combined.

  • Let the mixture cool slightly until just warm (room temp), so it doesn’t form bubbles or separate when chilled.

4. Pour and chill

  • Pour into cups, glasses, ramekins, or a shallow dish.

  • Chill in the fridge for at least 3–4 hours, or until fully set.


🍴 To serve

  • Eat straight from the mould, or top with whipped cream, extra condensed milk, crushed ice, or fruit.

  • For unmoulding: dip the mould briefly in warm water and invert onto a plate.
