Chewy Glutinous Rice Flour Pancakes (No Milk)

🧾 Ingredients (makes 4–5 small pancakes)

  • ½ cup glutinous rice flour (~60g)

  • 1 egg

  • 1–2 tbsp sugar (to taste)

  • 1 tbsp melted butter (plus more for frying)

  • 3–4 tbsp water (or more, to loosen batter)

  • Optional: pinch of salt or drop of vanilla


👩‍🍳 Instructions

  1. Mix batter
    In a bowl, whisk together:

    • 1 egg

    • 1–2 tbsp sugar

    • 1 tbsp melted butter

    • Add ½ cup glutinous rice flour

    • Stir in 3–4 tbsp water gradually to form a smooth, slightly thick batter (like cream)

  2. Rest briefly (optional)
    Let batter sit for 5–10 minutes to hydrate the flour (makes it smoother when cooked).

  3. Cook
    Heat a non-stick pan over medium-low heat and add a small bit of butter.
    Pour in batter to form small pancakes.
    Cook 1–2 minutes per side, until golden and slightly puffed.

  4. Serve
    Enjoy warm, optionally with:

    • A drizzle of honey or condensed milk

    • Sliced fruit or toasted sesame

    • Peanut-sugar topping or coconut flakes

Ingredients (makes 4–5 small pancakes)

  • 1 tbsp sugar (optional)

  • ½ cup milk (add a little more if too thick)

  • 1 tbsp neutral oil (plus more for frying)

  • Pinch of salt

Method

  1. In a bowl, mix flour, sugar, and salt.

  2. Add milk and oil, whisk until smooth. Batter should be pourable but slightly thick (like pancake batter).

  3. Heat a lightly oiled pan on medium.

  4. Pour a small ladle of batter, cook until the surface sets and edges lift slightly. Flip and cook the other side until lightly golden.
