Ingredients:

Fresh or cleaned frozen keski (small sprats)

Salt (to taste)
Garlic powder

Pepper or paprika (optional)

Flour or fine cornmeal (for coating)

Oil (sunflower or vegetable oil works best for frying)

Lemon wedges (to serve)
Instructions:

Prep the fish: If not already cleaned, you can remove the heads and guts (optional – many people fry them whole).

Pat dry with a paper towel to avoid splattering.

Season with salt and any spices you like.

Coat the fish lightly in flour or cornmeal. Shake off excess.

Heat oil in a deep pan or fryer to 180°C (356°F).

Fry in batches until golden and crisp (2–4 minutes depending on size).

Drain on kitchen paper.

Serve with lemon, and maybe a garlic dip or tartar sauce.
